Red Velvet Cupcakes

INGREDIENTS
--CUPCAKES--
2 1⁄2 cups unbleached flour, sifted
3 tablespoons cocoa powder (unsweetened) 11⁄2 teaspoons baking soda
1 teaspoon salt
1 1⁄2 cups sugar
1 1⁄2 cups vegetable oil
3 large eggs, beaten
2 teaspoons Adams red food coloring
1 teaspoon Adams pure vanilla extract
1 cup buttermilk
1 teaspoon distilled white vinegar
--CREAM-CHEESE FROSTING--
8 oz. butter, softened
12 oz. cream cheese, softened
4 cups powdered sugar, sifted
3⁄4 teaspoon Adams pure vanilla extract
Notes
To serve, spread each little cake with the frosting. I sometimes leave one cupcake unfrosted, crumble it, and sprinkle the crumbles on the other cream-cheese frosted cupcakes. Or, for Valentine’s Day, you can place a red heart candy on top of each one. For Christmas, put on a peppermint candy. No matter how you top them, they’re YUMMY!
