
Wendy Dale Young (and, yes, she’s the daughter of Alan Young of the “Mr. Ed” show) was a producer on my musical cookin’ show, “Cookin’ With A Right Smart Of Love.” One night after the show, she invited me over to her house for coffee and dessert so we could talk about some stuff about the show. I took one bite of Wendy Dale’s Carrot Cake, and honey, I threw my own recipe away – of course I did! You won’t believe how good this is!
Wendy Dale’s Florida Carrot Cake

INGREDIENTS
Carrot Cake
2 cups Sugar
2 cups Flour
2 teaspoons Baking soda
1 teaspoon Baking powder
2 teaspoons Cinnamon
11⁄2 cup Vegetable oil
4 Eggs
3 cups Carrots (grated)
1 cup Nuts
1⁄2 cup Raisins
Dash of salt
Icing
1 stick Butter or margarine (softened)
1 package Cream cheese (8-oz. package softened)
1 box Powdered sugar (about 21⁄2 cups)
2 teaspoons Vanilla extract
Dash of salt
INSTRUCTIONS
Carrot Cake
In a bowl, combine the sugar, flour, baking soda, baking powder, cinnamon, and dash of salt.
Stir in oil and eggs (add 1 egg at a time).
Add in grated carrots, nuts, and raisins (if you don’t like nuts or raisins you can reduce each by half, depending on taste).
Place in two 9-inch greased and floured cake pans.
Bake at 350° F for about 45 minutes or until done. (If you stick a toothpick into the cake and it comes out clean, it’s done!)
Icing
Combine all ingredients and beat ‘til smooth.
Spread on cooled cake layers and gobble it up! Yum, yum!
