Wendy Dale’s Florida Carrot Cake

Updated: Dec 31, 2023

CarrotCake

Wendy Dale Young (and, yes, she’s the daughter of Alan Young of the “Mr. Ed” show) was a producer on my musical cookin’ show, “Cookin’ With A Right Smart Of Love.” One night after the show, she invited me over to her house for coffee and dessert so we could talk about some stuff about the show.  I took one bite of Wendy Dale’s Carrot Cake, and honey, I threw my own recipe away – of course I did! You won’t believe how good this is!

2 cups Sugar

1 package Cream cheese (8-oz. package softened)

1 box Powdered sugar (about 21⁄2 cups)

Carrot Cake

  1. In a bowl, combine the sugar, flour, baking soda, baking powder, cinnamon, and dash of salt.

  2. Stir in oil and eggs (add 1 egg at a time).

  3. Add in grated carrots, nuts, and raisins (if you don’t like nuts or raisins you can reduce each by half, depending on taste).

  4. Place in two 9-inch greased and floured cake pans.

  5. Bake at 350° F for about 45 minutes or until done. (If you stick a toothpick into the cake and it comes out clean, it’s done!)

Icing

  1. Combine all ingredients and beat ‘til smooth.

  2. Spread on cooled cake layers and gobble it up! Yum, yum!
