Tart and Creamy Lemon Bars

My Momma used to make a lemony frozen custard which was delicious, but it was a time consuming recipe. One day while I was over visiting my friend Daddy’s friend, Nene, she had made these incredible Tart and Creamy Lemon Bars. Honey! They was dee-lish! There were also so less time consuming to make compared to my momma’s lemony frozen custard. So, I got the recipe from Nene and have been making ’em ever since! Why? Well, ‘cause these here lemon bars are just too good not to share! Enjoy!


Tart and Creamy Lemon Bars

INGREDIENTS

For Crust:

1 cup salted butter (softened)

½ cup sugar

2 cups flour

For Lemon Filling:

6 eggs (beaten)

2 ¾ cups sugar

1 cup lemon juice (freshly squeezed)

2 ½ tablespoons lemon zest (freshly grated)

1 cup unbleached flour

Powdered sugar (for dusting on top when cooled)

INSTRUCTIONS

  1. Preheat your oven to 350°.

First we’ll make the crust.

  1. Git yourself a large mixing bowl.

  2. Cream the butter and sugar until it’s blended.

  3. Add the flour a little at a time ‘ til blended and you have a dough ball.

  4. Then git an ungreased 9” x 13” baking pan and press the dough down into the baking pan until it’s flattened. If it’s a little sticky, dust your hands with flour before pressing the dough into the pan. Press it up the sides about a half inch.

  5. Bake the crust for 20 minutes until lightly browned.

  6. Then let the crust cool before adding your filling. I let it cool on a wire rack.

Now, we’ll make the lemon filling.

  1. Git yourself another mixing bowl and whisk together the eggs and the sugar.

  2. Once that’s blended, add the freshly squeezed lemon juice and lemon zest and whisk together ‘til blended.

  3. Then, add the flour, a little at a time ‘til mixed.

  4. Now, pour the lemon filling you just made over your cooled crust.

  5. Bake for another 35 minutes in that same 350° oven.

  6. Remove from the oven and let your bars cool until the filling is set.

  7. Once the bars are completely cooled to room temperature, they will set and you can cut them into 2 inch squares and dust the top with some powdered sugar.

  8. Then, eat yourself one of them creamy, tart lemon bars ‘cause they are sooo yummy!
