Peanut Butter Cookies

INGREDIENTS
1 ½ unbleached flour
1 teaspoon baking powder
½ cup salted butter (softened)
1 cup creamy peanut butter
½ cup sugar
½ cup light brown sugar
1 ½ teaspoons vanilla
1 egg (beaten)
INSTRUCTIONS
Preheat your oven to 350ᵒ. Line a cookie sheet with parchment paper.
Get out a mixing bowl and sift the flour and baking powder together into the bowl.
In another mixing bowl and whisk to cream together the softened butter, the white and brown sugar, the egg, and vanilla. Then, add the peanut butter and beat or whisk until well blended. You’ll end up with a nice, pliable dough.
Now, roll the dough into little 1-inch balls and place the balls on your cookie sheet lined with parchment paper.
Get yourself a fork and flatten the balls with a crisscross pattern atop each cookie.
Bake the cookies for 8-10 minutes. (Then allow to cool before decorating or stuffing. See below.)
NOTES
You can decorate your cookies by dipping them partially in chocolate and sprinkling with chopped peanuts. Just melt 1 tablespoon of butter along with a bag of semi-sweet (or dark) chocolate chips or chunks , and in another bowl add chopped or crushed bag of cashews or peanuts. Then, dip half of the cookie into the melted chocolate and then top with the crushed or chopped cashews by gently pressing the chopped nuts into the warm chocolate. You can also use the melted chocolate, and spread some on the backside of 2 cookies and make a peanut-butter-chocolate sandwich. (see pictures)
