Growin’ up we used to have a beach house in Panama City, Florida. The last thing we wanted to do was spend an hour fixin’ supper after a day at the beach or out in the boat. So, Daddy would boil up some fresh shrimp and make his famous hot sauce. Dadgum, that stuff was good! He’d just throw all the shrimp, still in their shells, on a big platter and plop the hot sauce in a bowl in the middle and everybody would dig in! Everybody’d peel their own and there’d be a big empty bowl on the side for the shells. I believe that every once in a while, you just gotta have some fun by getting’ your hands into it! Now, honey, that’s what I call some good eatin’!

Boiled Shrimp With Daddy’s Hot Sauce

INGREDIENTS
Shrimp
3 pounds Raw shrimp
3 tablespoons Crab boil (I like the bottle, but you can use the bag that comes in a box)
1 Lemon (cut in half)
Salt and pepper to taste
Daddy’s Hot Sauce
3⁄4 cup Ketchup
1⁄2 Lemon (squeezed)
2 tablespoons Horseradish (plain, not creamed)
1⁄2 teaspoon Worcestershire Sauce
1⁄4 teaspoon each Salt and pepper
1⁄4 teaspoon Garlic powder
INSTRUCTIONS
Shrimp:
Fill your pot with water.
Squeeze lemon into the pot then throw in the squeezed lemon halves.
Add the Crab Boil and salt and pepper. Also add the raw shrimp still in the shells. (If the heads are still on, that’s OK,too. They add to the flavor!)
Put it on the burner on a medium heat. Let it slowly come to boil. (The shrimp will be pink by then.)
Let it boil for about 6 seconds and take it off!
Pour the shrimp into a colander and put some ice-cubes into the colander with the shrimp.
Let cool and make the sauce while you’re waiting.
Daddy’s Hot Sauce*:
Mix all the ingredients together in a bowl and place in ice-box.
To Serve
Place the sauce in a bowl in the middle of a big plate or platter and place the shrimp (still in their shells) all around it.
Have another big bowl for the discarded shells.
NOTES
* Daddy always said, “If it don’t blow the top of your head off when you taste it, add more horseradish!”
