My Sister Linda’s Meatloaf

Nuthin' says HOME like My Sister Linda's Meatloaf! This meatloaf is even better because it is made with the delicious beef hamburger from Wyoming's Meriwether Farms delivered fresh to your doorstep! One bite of this meatloaf and your kids will love you forever!

MY SISTER LINDA'S MEATLOAF

INGREDIENTS

2  one-pound packages of hamburger

(Meriwether Farms has GREAT beef. Check out https://meriwetherfarms.com)

½  each of red bell pepper, yellow bell pepper and green bell pepper (finely chopped)

1 small white onion (finely chopped)

4 cloves of fresh garlic (peeled and chopped)

1 egg (beaten)

2 teaspoons of Kosher salt

2 teaspoons freshly ground black pepper

1 teaspoon cayenne pepper

2 teaspoons garlic powder

2 teaspoons of dried Italian seasoning

1 ½ sleeves of Ritz Crackers (crushed)

1 eight-ounce can of Contadina Tomato Sauce

1 six-ounce can Contadina Tomato Paste


INSTRUCTIONS

1.    Preheat your oven to 350ᵒ.

2.    Get out a big mixing bowl and add the 2 packages of hamburger and break it up with a big spoon. Then, add the finely chopped bell peppers, the finely chopped white onion, the freshly chopped garlic and the egg. Mix it altogether. (I throw on  some rubber gloves and my hands to mix it)

3.    Next, add the salt, black pepper, cayenne pepper, garlic powder and Italian seasoning and mix until blended.

4.    Now, get out a gallon-size zip lock bag and add the sleeve and ½ of Ritz crackers. Then, getting all the air out, close the top tightly and with a rolling pin, crush the crackers in the bag. (or use your food processor) Add the crushed crackers to the meat mixture in your big mixing bowl and stir ‘til blended.

5.    Next, add to the meat/cracker mixture about 2/3 of the can of tomato sauce and 2/3 of the tomato paste and stir (or mix with your clean or rubber-gloved hands) until it is nicely blended and the meat is nice and moist.

6.    Lastly, get out a small bowl and stir to blend the rest of the tomato paste and tomato sauce together for the top of the meatloaf.

7.    Get out your large oblong cooking pan (or2 pans if you are dividing it in half and freezing one pan of meatloaf for later use) and fill the pan with the meat mixture. Then, spread the top of the meatloaf with the sauce/tomato paste mixture that you blended.

8.    Pop it in your preheated 350ᵒ oven and bake for 50-55 minutes if it is one big meatloaf OR 45 minutes for 2 smaller meatloaves. Once the meat starts to pull away from the sides of the pan and browns a bit on top, it is done.

9.    NOTE: I’m tellin’ you, this Merriwether Farms hamburger meat is so fresh (unlike the grocery store hamburger meat) that it will cook faster and have a lot less grease. This freshness makes a HUGE difference in the taste and texture of all the recipes you use the beef in. All their meats are really beautiful and tasty and fresh. And, I don’t get a penny for promoting their product. It is just that good! ALSO, I have backed this meatloaf in my Corning Ware, in my Non-Stick Made In cookware and, even in one of my large bread pans. It always comes out great. Serve it up with some mashed potatoes and fresh green beans and your family will love you!
