INGREDIENTS
2 sticks butter (softened)
1 cup light brown sugar
½ cup granulated sugar
2 eggs (beaten)
1 teaspoon salt
2 teaspoons vanilla
1 ½ cups all-purpose flour
1 teaspoon baking soda
2 cups semi-sweet chocolate chips
INSTRUCTIONS
Preheat your oven to 350° F.
Grease an 9” X 13” baking pan. (I use this size so that the blondies are not so tall. If you like them fatter, use an 8” X 12” pan.)
Git yourself a big mixing bowl.
Combine the butter, brown sugar, granulated sugar, eggs, salt and vanilla. (You can use a hand mixer or just mix by hand with a good wooden spoon.)
In another bowl, add the flour and the baking soda and blend together.
Now, set aside about ⅓ cup of the chocolate chips into a little bowl. (You’re gonna throw them on top later).
Then, sift the flour mixture as you add it into the big bowl of your butter-brown sugar.
Mix ‘til well blended.
Add your chocolate chips (minus the ⅓ cup to place on top) and stir into mixture.)
Pour the blended mixture into your 9” X 13” greased pan and pat down into corners.
Sprinkle remaining ⅓ cup chocolate chips over the top of the batter.
Bake at 350° for 30 minutes.
Check after 20 minutes (since I don’t know how hot your oven cooks at!) by inserting a toothpick into the blondies.
If the batter is still gooey, bake for another 5-10 minutes. Some people like them a bit underdone, some like it more cakey, it’s up to you!
If it comes out clean, they’re done. ( i.e. with no gooey batter on it…the chocolate chips will, of course, be gooey and melting).
Remove from oven when done and let them completely cool. (If you can resist!)
Now, cut into squares and dig in! YUM!
NOTES
You can add ½ cup of chopped pecans or walnuts if you like nuts. Or - if you're a big nut! 🙂
