INGREDIENTS
1 or 2-pound bag of small mixed potatoes (they usually come in 1 lb. or 1.5 lb. bags)
Kosher salt
Freshly ground black pepper
Italian spices (optional-or whatever you like)
Extra virgin olive oil
INSTRUCTIONS
Preheat your oven to 350°. Get out a roasting pan.
Wash your little potatoes and pat them with some paper towel to dry off any extra water. Then, cut them in half. Throw your halved potatoes into your roasting pan.
Pour some olive oil into the palm of your hands and grease the potatoes you’ve got in the roasting pan…is this easy, or what!
Rub any excess oil into your arms and hands because it’s great for your skin. Now, sprinkle the greased potatoes with some salt and pepper (and Italian spices or spices of your choice-or only salt and pepper-these little potatoes are so tasty that you really don’t need much in the way of spices.)
Place the pan in the 350° oven and roast the potatoes for 25-30 minutes until browned. Serve ‘em up hot, and believe me, everybody’ll want seconds! That’s why I just roast the whole little bag of those cute little red and white and purple potatoes with a little freshly chopped rosemary of parsley! YUM!
