Nothing says “Happy Valentine’s Day!” like these here Red Velvet Cupcakes with Cream Cheese Icing. YUM! Served up with a glass of bubbly champagne, these sweet cupcakes are the perfect way to tell your sweetheart, “I LOVE YOU!”



Valentine Red Velvet Cupcakes with Cream Cheese Icing

INGREDIENTS

Cupcakes:

2½ cups unbleached flour ( sifted)

3 tablespoons cocoa powder (unsweetened)

1½ teaspoons baking soda

1 teaspoon salt

1½ cups sugar

1½ cups vegetable oil

3 large eggs (beaten)

2 teaspoons red food coloring

1 teaspoon pure vanilla extract

1 cup buttermilk

1 teaspoons distilled white vinegar

Cream Cheese Frosting:

8 ounces butter(softened)

12 ounces cream cheese (softened)

4 cups powdered sugar ( sifted )

¾ teaspoon pure vanilla extract

INSTRUCTIONS

Cupcakes:

  1. Preheat your oven to 350 and line 2 (12-cup) muffin tins with some cupcake papers.

  2. In a medium-sized mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.

  3. In another big bowl beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer.

  4. Then, add the dry ingredients, a little at a time, to the wet and mix until it’s smooth and fully combined.

  5. Next, divide the batter evenly among the cupcake tins (about ⅔ the way up each cup).

  6. Bake in the oven for about 20 to 22 minutes, turning the pans around from front to back, once, about half way through cookin’.

  7. Then, take them out and check your cupcakes with a toothpick for doneness, and remove from the oven and let cool before frosting.

Cream Cheese Frosting:

  1. In a big mixing bowl, beat the cream cheese, butter and vanilla together until smooth.

  2. Add the sugar and on low speed, beat until well mixed. Or, as Grandmama Watson said, “Beat ‘til used.”

  3. Then, beat on high and mix until all light and fluffy.

  4. Decorate the top of each cupcake with a cute little red heart cutout or sugared red hearts (that you can find online along with all kinds of cute Valentine decorations for your cupcakes to make them special) YUM!
