Tamari-Honey Oven Baked Thighs

INGREDIENTS

6 chicken thighs

¼ cup olive oil

⅓ cup Tamari Sauce (you can also use soy sauce or teriyaki)

5 tablespoons honey (or 1 /2 cup brown sugar)

3 cloves fresh garlic (minced)

1 tablespoon fresh ginger (grated)

1 teaspoon cayenne pepper

Juice of 1 lime (squeezed)

1 teaspoon each of salt and black pepper

6 tablespoons of butter

INSTRUCTIONS

  1. Preheat your oven to 350°.

  2. Git a gallon-size zip lock freezer bag or a bowl. Mix together the olive oil, the Tamari Sauce, honey, ginger, garlic, cayenne, lime juice, salt and pepper.

  3. Put your thighs into the bag of the Tamari Sauce mixture, close the zip lock and lay it on its side and massage with your hands to thoroughly coat the thighs. Then, lay the bag of the coated thighs on its side in your refrigerator to marinate for at least one hour. (I just do it in the morning when I get up and let ‘em marinate until I cook ‘em for supper.)

  4. Preheat your oven to 350°. Once the oven is hot, git out a lasagna-sized pan, andunzip the bag and lay the thighs in the pan. (Throw away the bag of leftover Tamari Sauce out…it has done its job.) Then, place a pat (or tablespoon) of butter on each thigh and bake for 45 minutes until golden brown.

  5. When they’re done, serve them thighs up while they’re nice and warm. Sprinkle with a few sesame seeds or fresh cilantro. YUM!
