Spinach Feta Muffins

These yummy Savory Spinach and Feta Cheese Muffins make a nice change from regular ol’ dinner rolls or a baguette. I’ll serve them with a big salad for lunch or with roasted leg of lamb or lemon chicken with potatoes for dinner. They’re really good! As a matter of fact, there’s nobody that’s sat at my supper table, that didn’t just luv ‘em – and asked for more!

INGREDIENTS


12 regular-sized paper baking cups

2¾ cups all purpose flour

¼ cup sugar

2 teaspoons baking powder

1 teaspoon paprika

¾ teaspoon salt

¼ teaspoon black pepper

¾ cup evaporated milk

½ cup vegetable oil

2 large eggs (beaten)

1 cup fresh spinach leaves (chopped or thinly sliced)

1 tablespoon fresh dill (chopped fine) / optional

¾ cup feta cheese (crumbled)

1 tablespoon Parmesan cheese (finely grated)

INSTRUCTIONS

  1. Preheat oven to 375°F.

  2. Place paper baking cups in your muffin tin. If you don’t have any paper cups, then grease your muffin tin cups with olive oil or non-stick spray. (I prefer using the paper baking cups.)

  3. In a medium-sized mixing bowl, add your flour, sugar, baking powder, paprika, and salt and pepper until blended and set aside.

  4. In another large mixing bowl, whisk your evaporated milk, oil, and eggs until blended.

  5. Next, add the dry ingredients into the milk mixture and whisk just until blended.

  6. Now, add the spinach, feta, dill and fold into the batter. Do not over mix!

  7. Lastly, divide batter among the prepared muffin cups. You can fill ¾ of the way up the top of each cup as they will not rise much.

  8. Bake your muffins until a toothpick placed into center comes out clean, about 25 to 28 minutes, depending on hot your oven cooks. When you take them out of the oven, slather a little softened butter (not margarine!) over the top of the muffins. Serve warm. YUM-MEE!

NOTES


Makes 12 regular- sized muffins or 6 extra-large muffins, depending on what kind of muffin tin you have. The extra-large muffins will require 33-35 minutes of cooking time.
