Parmesan-Crusted Chicken Skewers

Heaven only knows that not a month goes by when diehard sports fans of either the NBA, NFL, World-Class Soccer, The Winter Olympics, The Summer Olympics or World Championship Boxing aren’t gathering around some big ol’ 50-plus inch TV screens rootin’ for their favorite players and teams! So, all I’ll got to say is here’s the perfect, finger food for all them crazy “game day” guests! Best of all, is so simple and easy to make, but don’t tell them that.



Parmesan-Crusted Chicken Skewers

INGREDIENTS

1 ½ pound de-boned chicken breasts (cut into even-sized 2 inch chunks)

2 cups butter-flavored crackers (crushed fine)

3 sticks butter (melted)

1⁄2 cup freshly grated Parmesan cheese

1 teaspoon each of garlic powder/ salt/ freshly ground black pepper/fresh oregano/ fresh basil /and parsley (all finely chopped)

12 -14 Wooden skewers (bamboo is best)

INSTRUCTIONS

  1. Preheat your oven to 375°.

  2. Melt the butter in a saucepan and set it aside.

  3. Now, grind the crackers in your food processor. (Or place in a plastic bag and roll with a rolling pin ‘til crushed).

  4. Add the cheese and spices and herbs into the cracker mixture and pour onto a cookie sheet.

  5. Pour the butter into a 9”x 11” dish.

  6. Skewer the chicken ( 4 chunks on each skewer) and then dip it into the butter and then into the cracker mixture. Roll it ‘til it’s coated with the cracker mixture.

  7. Place it on a cookie sheet or baking pan that is covered with a piece of parchment paper.

  8. Bake for about 20-25 minutes (turning over once after 10 minutes) ‘til golden.

  9. Take out and arrange on a platter. Yummy-tummy food for all your guests!
