INGREDIENTS
1½ pounds fresh raw large or jumbo shrimp (peeled and deveined)
⅓ cup olive oil
⅓ cup honey
⅓ cup fresh cilantro (chopped)
5 cloves garlic (pressed)
2 tablespoons freshly squeezed lemon juice
½ teaspoon salt
½ teaspoon freshly ground black pepper
⅛ teaspoon crushed red pepper flakes
INSTRUCTIONS
Get out a small bowl and mix together the olive oil, honey, cilantro, pressed garlic, lemon juice, salt, black pepper, and red pepper flakes. Once mixed, pour about ¼ cup of the mixture into a measuring cup for use later.
Place your peeled and deveined raw shrimp in a big ziplock bag and pour the remaining marinade over the shrimp, close the top of the bag and lay on your counter and work gently with your fingers until all the shrimp have been covered in the marinade. Then, place in the fridge for 30 minutes to marinate, turning or flipping the bag once to be sure they are all well coated.
Once marinated, gently skewer the shrimp, spreading on a little extra marinade from the bag before grilling the skewers.
Fire your grill up to medium-high heat. (I use a grill matt so the shrimp don't burn) and grill for about 2 minutes on each side until the inside meat is white and the outside is a nice pinkish-orange.
Remove the grilled shrimp to a plate and spoon over the reserved marinade for a final tasty touch. You can serve over white rice or on little individual skewers as an appetizer. Yum!
