I made this Easy Fried Rice recipe and threw in some left-over smoked duck pieces from our New Year’s buffet. However, you can just serve it with eggs, or if you want to make a whole meal out of it, with leftover chicken, shrimp, or beef. You’ll want to chop, slice, or cube your meat and use about ½ cup. This is a quick and easy recipe for those times you don’t want to spend a few hours preparing a big meal. Enjoy!
Easy Fried Rice

INGREDIENTS
2 cups white rice (cooked according to package directions/ allow to cool when done)
1 small white onion (chopped)
2 carrots (peeled and diced)
5 cloves fresh garlic (chopped)
½ cup frozen sweet green peas (thawed)
3 tablespoons butter (divided)
2 teaspoons sesame oil
2 eggs (whisked)
2 tablespoons tamari sauce (or low-sodium soy sauce)
2 teaspoons oyster sauce
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
½ cup of left-over chicken, beef or shrimp (optional)
INSTRUCTIONS
1. Cook your white rice according to the instructions on the package. Then, once it’s done, take it off the burner and let it cool while we sauté the vegetables.
2. Get out your skillet and heat the sesame oil and 2 tablespoons of the butter over medium-high heat. Once the butter is frothy, stir in the onions, garlic, and carrots. Sauté until the onion is translucent and the carrots have softened a bit. Add the thawed green peas and stir to heat a bit. Then, push the vegetables over to the side of your skillet.
3. Now, add another tablespoon of butter to the empty space you have created. Once the butter is frothy, add the 2 whisked eggs, stir with a wooden spoon, and cook until done.
4. As soon as the egg is softly cooked, re-incorporate the vegetables into the eggs, and add in your cooked rice (along with your meat, shrimp, or beef). Then, add the 2 tablespoons of Tamari sauce, the 2 teaspoons of oyster sauce, garlic powder, and black pepper, and stir/mix until blended.
5. Serve immediately. If you like, you can garnish it with a little chopped green onion. How easy was that!!
