Chocolate Molten Lava Cakes

Nuthin’ says Happy Valentine’s Day like chocolate! And nuthin’ says “You’re mine, baby!” like the moment your loved one cuts into one of these warm Chocolate Molten Lava Cakes and watches that rich, dark chocolate ooze out onto their plate. Lord help me, I’m in luv with this recipe!


Chocolate Molten Lava Cakes

INGREDIENTS

1 ¼ sticks butter

2 ounces bittersweet chocolate

2 ounces semi-sweet chocolate

1⅓ cups powdered sugar

3 whole eggs (beaten)

3 egg yolks

1 teaspoon vanilla

½ cup all-purpose flour

Powdered sugar for dusting

INSTRUCTIONS

  1. Preheat your oven to 425° F.

  2. Grease yourself 6 baking ramekins or custard cups (I have theses cute little cups in the shapes of hearts) and place the greased cups on a baking tray or pan.

  3. Get yourself a double boiler and once the water gets to boilin’, melt the butter and chocolate in the top pan. (Note: You can also use a microwave, but, frankly, I don’t even own one ‘cause I ain’t big on be glowin’ in the dark!) Whisk it until the chocolate is melted and it’s blended.

  4. Once melted, stir in the powdered sugar until that’s blended.

  5. Now, git yourself a bowl and beat all them eggs and add them into the melted chocolate along with the vanilla.

  6. Last, add the flour to the chocolate-egg mixture and whisk until that’s also well blended. (Or as Grandmama Watson used to say, “Beat ‘til used.”)

  7. Divide your batter evenly among the custard cups.

  8. Bake in your preheated oven until the sides are all firm, about 14-15 minutes.

  9. Remove from the oven. The edges and outside should be firm, but the center will be soft. Let them stand and cool for about 1 minute or so.

  10. Run a knife along the sides of the cups to loosen the cakes and invert onto a serving plate. You can also place the dessert plate over the top of the ramekin or custard cup and turn over/invert onto the dessert plate.

  11. Dust with a little extra powdered sugar and serve immediately while still warm. When you cut them sweet little cakes with a fork, all that beautiful warm chocolate oozes out from the center and, honey, you’re in Chocolate Lava Heaven!! YUM!
