INGREDIENTS
For Chicken:
3-4 Boneless Chicken Breasts
Salt And Pepper
4 Tablespoons Butter
1 Tablespoon Olive Oil
For Sauce:
7 Tablespoons Butter
3 Tablespoons Flour
1 Cup Half & Half (Or Milk)
1 Tablespoon Worcestershire Sauce
1 Teaspoon Each Salt And Pepper
1 Teaspoon Garlic Powder
1 Teaspoon Fresh Sage (Chopped)
1 2 Cup Parmigiano-Reggiano Cheese (Grated)
INSTRUCTIONS
Preheat your oven to 350°.
Git out your cast iron skillet (or an ovenproof skillet). Salt and pepper your boneless chicken breasts.
Heat the 4 tablespoons of butter and the tablespoon of olive oil over a medium-high heat. Once the butter is all frothy, add the boneless chicken breasts and brown on both sides, about 4 minutes on each side, until they have a nice golden brown color.
Once they are done, remove them to a plate so we can use the drippings from the pan and make the sauce.
Now, add the 7 tablespoons of butter to the skillet and scrape up all the drippings and bits from the bottom of the pan. Once the butter is all frothy, whisk in the flour until you almost have a paste. Then, add the half & half (or milk) and continuously whisk over the medium-high heat until it begins to thicken. Next, add the Worcestershire, salt, pepper, garlic powder, sage and mix ti’ blended. Lastly, turn off the burner and add the parmigiano-reggiano cheese and whisk until blended.
Place the browned chicken breasts back into the pan of sauce, spooning some of the sauce over the breasts.
Place the breasts with the sauce into the preheated oven, and bake for 10 minutes.
Once cooked, remove the chicken from the oven, sprinkle with some parsley or fresh herbs, and serve them up with some white rice and a nice salad. YUM!
