Bobbi Jo’s Big Ol’ Skillet Chocolate Chip Cookie

When I was younger, I was touring nightclubs with a musical comedy group. My roommate at the time was this pretty, red-headed gal named Pat. Now, Pat was certainly eye-candy for all the menfolk, but that girl didn’t know the first thing about cookin’!


Frankly, I’d be scared to even ask her to boil me some water for tea! Well, this all changed when she started dating this good lookin’ boy from a rich oil family. Pat wanted to impress him by baking him some chocolate chip cookies. So, I slapped an apron on her and took her into that room we called a “kitchen” and began giving her, her first cooking lesson.


However, once the batter was ready, the phone rang and I had to leave and run over to the club we were playin’ at, for a rehearsal. So, I got out 2 cookie sheets and explained to her how to scoop a spoonful of the cookie dough onto each baking sheet, place the scoops about 2 inches apart from each other, and then just bake ‘em in her preheated oven ‘til golden brown. Easy-Peasey!


When I arrived back home a few hours later, there was Pat, sound asleep on the couch, still wearin’ her apron. I went into the kitchen to check out her work, and there on the counter was one baking sheet with about 10 nicely browned cookies . But, on the other cookie sheet was this one, gigantic chocolate chip cookie, all brown on the outside and half-done on the inside! When she woke up later, Pat explained, “I just got so tired of making all those scoops of batter and I wanted to take a nap. So, I just threw all the rest of the cookie dough onto the second sheet and baked it.”


So, this here recipe of Bobbi Jo’s Big Ol’ Skillet Chocolate Chip Cookie is for all the Pats out there. I promise it’ll be very simple for you to make, and will surely melt the heart of any good lookin’ boy you may be dating! Rich or poor! YUM!

Bobbi Jo’s Big Ol’ Skillet Chocolate Chip Cookie

INGREDIENTS

1 cup unsalted butter (2 sticks softened)

1 cup dark brown sugar

½ cup granulated sugar

2 eggs (beaten)

2 teaspoons vanilla

1 teaspoon salt

2 ¼ cups all-purpose flour

1 teaspoon baking soda

½ cup pecans (chopped) optional

2 cups semi-sweet chocolate chips

INSTRUCTIONS

  1. Place your oven rack in the middle position and preheat your oven to 375°.

  2. In a big bowl, whisk (or beat on low with a hand mixer) your softened butter with the brown sugar and regular granulated sugar ‘til smooth.

  3. Add the vanilla and the eggs and whisk for another minute ‘til nicely blended.

  4. In another bowl, mix the baking soda and flour ‘til blended.

  5. Then, add the flour mixture to the butter mixture and stir it ‘til completely combined.

  6. Stir in the nuts (optional) and the chocolate chips. (I always save a few chocolate chips to place on top.)

  7. Grease your 12-inch cast iron skillet and then pour the whole cookie batter into the greased skillet and pat down into the skillet evenly with a spatula. And, sprinkle those few chocolate chips over the top of the batter.

  8. Now, stick that giant cookie in your skillet into the preheated oven and let it bake for 25 minutes (20 in you like it more gooey) until the edges are a beautiful golden brown. (NOTE: after about 10 minutes of cookin’ I open the oven and turn the pan around so it cooks evenly.)

  9. Once it’s golden brown and the whole kitchen smells GREAT, take the skillet out of the oven and let it cool on a wire rack or wooden cutting board (or just a cool stovetop) for about 20 minutes.

  10. Then, cut into wedges and slap a little vanilla ice cream or whipped cream on top and dig in! YUM! I LUV me some Big Ol’ Skillet Chocolate Chip Cookie!
