St. Patty’s Irish Cream Liqueur Fudge

Irish Cream Fudge

Now, you maybe cain’t tell from my accent, but some of my people hail from Ireland! So, to celebrate this St. Patty’s Day, I give you this special Irish Cream Liqueur Fudge recipe to share with all your lucky charmers!!! And may the Faeries be with you! (Note: Since not all the liqueur cooks out, you may want to keep these from the wee folk in the family. Leprechauns are fine, just not the kids! )

St. Patty’s Irish Cream Liqueur Fudge

INGREDIENTS


¾ cup butter (1 ½ sticks)

3 cups sugar

¾ cup evaporated milk

⅓ cup Irish cream liqueur (I like Bushmill’s or Bailey’s)

7 oz marshmallow cream

1 8 oz. pkg white chocolate chips

1 tsp vanilla extract

INSTRUCTIONS

  1. Line an 8 inch square pan with parchment paper.

  2. Git yourself a medium-sized saucepan and melt the butter, the evaporated milk, and the sugar.

  3. Cook over a medium heat, stirring constantly, until blended.

  4. Once it comes to a boil, then keep stirring, and let it boil for another 3 to 4 minutes.

  5. Now, take it off the heat and slowly fold into the heated mixture, the marshmallow cream, the Irish Cream Liqueur, the white chocolate chips and the vanilla. You can beat by hand or use a mixer, and beat or mix ‘til smooth.

  6. Pour the blended mixture into your parchment-lined pan and chill for at least 2 hours.

  7. Once it’s hardened, take the fudge out of your ice box, and cut into small squares.

  8. Lastly, find yourself a handsome Leprechaun, pour yourselves a short glass of Irish Cream Liqueur, and enjoy a piece of this here lucky fudge.

  9. Oh, and don’t forget to raise your glasses and wish yourselves a very Happy St. Patrick’s Day!

Notes
