Spicy Sweet Potato Fries

INGREDIENTS
2 sweet potatoes (w/bright orange innerds-peeled and cut)
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon kosher salt
1 teaspoon black pepper (freshly ground)
¼ teaspoon cayenne pepper
1 teaspoon garlic powder
INSTRUCTIONS
Preheat your oven to 400°.
Cut your sweet potatoes into ¼ to ½ inch thick strips. Try to keep the lengths of the potato strips the same in order for them to cook evenly.
In a big bowl toss the sliced sweet potatoes in the olive oil until evenly coated.
Get yourself a rimmed baking sheet which has been oiled, or place a piece of parchment paper on the baking sheet. Then, spread the oiled sweet potatoes out evenly on the baking sheet in a single layer.
In a small bowl add the paprika, salt, black pepper, cayenne pepper and garlic powder and combine together with a spoon or your fingers.
Next, sprinkle the mixed spices over the sweet potatoes and toss until the potatoes are coated.
Roast in the oven for 20 minutes.
After 10 minutes, take out of the oven and turn the fries over so they cook on both sides evenly. After the 20 minutes, and the edges start to turn a little brown, remove the sweet potato fries from the oven and sprinkle with a bit more of salt, if needed. Now, serve them spicy sweet potato fries up and watch ‘em disappear!! YUM!
