Skillet Sweet Potato Hash with Eggs

I LUV hash with my eggs. But, I don’t wanna spend my whole mornin’ (or sometimes  evenin’…if I have breakfast for dinner!) cleanin’ a bunch of fryin’ pans… So, here’s a quick and easy way to serve up a complete, dee-lish-us Skillet Sweet Potato Hash with Eggs… all cooked in one pan! YUM!

Skillet Sweet Potato Hash with Eggs

INGREDIENTS

2 sweet potatoes (peeled and cut into ½ “cubes)

½ onion (finely chopped)

2 slices bacon (fried and crumbled)

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon freshly ground black pepper

½ teaspoon cayenne pepper

4 eggs

INSTRUCTIONS

  1. Preheat your oven to 400°.

  2. Git out your 12- inch cast iron skillet. Fry up your bacon (whole) over a medium heat ‘til crisp and done and then remove the bacon from the pan and drain on some paper towel. Once the bacon is cooled, crumble it and set aside.

  3. While your pan’s still hot, throw in the onions and cook in the bacon drippings until they turn translucent.

  4. Then, add into the skillet, the butter and stir it around as it froths.

  5. Immediately, add the cubed sweet potatoes and cook over the medium heat until slightly browned and become tender. If it gets too dry you can add another tablespoon of oil or more butter.

  6. Once the potatoes become tender, add the salt, pepper and cayenne pepper. Keep stirring occasionally until blended and your potatoes are tender. Then remove from the heat.

  7. Once removed from the heat, stir the crumbled bacon into the potatoes.

  8. Now, make 4 small wells into your potato mixture and crack the eggs, one at a time and add one egg into each well.

  9. Sprinkle the eggs with a little extra salt and pepper and bake in your preheated oven for another 10 minutes (or less, depending upon how you like your eggs).

  10. Remove from the oven and serve immediately. Serve up your hash with some angel flake biscuits or buttered toast. YUM! Is that an easy breakfast, or what!

NOTE

If you don’t like sweet potatoes (which means you’re problee not Southern) you can substitute some golden Yukon potatoes or even red potatoes.
