Collard greens & bacon

Nothin’ like sautéed Fresh Collard Greens to go along with some delicious Hoppin’ John (Black-Eyed Peas) and some Fresh Cornbread. Now that’s one tasty supper!


Sautéed Fresh Collard Greens

INGREDIENTS

2 Bunches of fresh Collard Greens (sliced thinly)

4 Cloves of fresh Garlic (roughly chopped)

2 tablespoons of olive oil

2 tablespoons of butter

Salt, pepper, cayenne pepper,, garlic powder to your taste (I add about ½ teaspoon of each)

1 tablespoon lemon juice (freshly squeezed)

INSTRUCTIONS

  1. Wash your fresh greens and dry with some paper towel.

  2. Tightly roll up the big leaves of collard greens and silce thinly on a cutting board.

  3. Add the olive oil and butter to the cast-iron skillet and sauté, briefly, the garlic. (You don’t want it to brown.)

  4. Now, add them sliced greens and sauté until tender, but still bright green. Keep stirring.

  5. Add the salt, pepper, cayenne and garlic powder.

  6. As soon as they wilt down (about 5 minutes) add the lemon juice and pile ‘em on a plate and serve with some glorious Hoppin’ John and fresh cornbread. YUM!
