Potato Gratin With Two Cheeses

INGREDIENTS
1 cup Half & half
1 cup Heavy cream
21⁄2 lbs. Potatoes (peeled and sliced thin)
1 cup Shredded Gruyere cheese
1 cup Grated Parmesan
3 tablespoons Butter
Salt & pepper
INSTRUCTIONS
Preheat oven to 325º F.
Grease a 9x13 baking dish.
In a large bowl, stir together the half and half, cream, 2 teaspoons salt and 11⁄2 teaspoons pepper. Add the potatoes and coat evenly with cream mixture.
Layer the potato slices in the greased dish, scatter cheeses and layer more potato slices until you have at least three layers. If you have to, press it with your palm to fit it snugly into the dish.
Top with remaining cheese and pour any remaining cream into the dish.
Scatter some butter over the top and bake ‘til a knife inserted into the potatoes meets with no resistance, about 35-40 minutes.
Let it rest for about 8 minutes and serve.
