Oven-Baked BBQ Ribs With BBQ Sauce

Once my The Skillet Diva Cookbook got out there, I was invited to be a guest chef on E! Network’s You’re Invited. The episode was gonna be a Country and Western surprise party. For the menu, I was planning on making BBQ Ribs, Texas Chili Beans, Tex-Mex Chili, Jalapeño Cornbread, Fancy Potato Salad and Crumbly Apple Pie. Now, I figured I’d cook them ribs on the grill outside. However, the party planner had taken over the whole backyard with all her bales of hay, kerosene lanterns and cowboy decorations. There wasn’t no room to be grillin’ anything out there. So, I realized right off, “Dadgum! I’m gonna have to bake these here ribs in the oven!” And, I don’t mind tellin’ you…they came out pretty darn good, if I do say so myself! In fact, this stuff’s so good, they’ll swear you cooked it on the grill out back!

Oven-Baked BBQ Ribs With BBQ Sauce

INGREDIENTS

Oven-Baked Ribs:

6 pounds Pork ribs (cut in halves or quarters)

1 Lemon, sliced thin

1 Onion, sliced thin

1⁄2 teaspoon each Salt/pepper/garlic powder

BBQ Sauce:

1 Large Onion (finely chopped)

3 Garlic cloves (minced)

2 tablespoons Chili powder

1 cup Ketchup

1 cup Bottled chili sauce

1⁄2 cup Packed dark brown sugar

1⁄2 cup Cider vinegar

3 tablespoons Vegetable oil

2 tablespoons Liquid Smoke

2 tablespoons Spicy brown mustard

2 tablespoons Worcestershire sauce

INSTRUCTIONS

Oven-Baked BBQ Ribs:

  1. Git yourself a big bakin’ pan and spread your pork ribs, meaty side up, in a single layer and sprinkle with salt, garlic powder and pepper.

  2. Cover with slices of onion and lemon.

  3. Cover pan with aluminum foil.

  4. Bake at 450° F for 30 minutes.

  5. Now, reduce the heat to 350° F. Remove the foil, the lemon and onion slices (don’t worry if onion doesn’t get removed completely) and baste with BBQ sauce (recipe below) and bake for another 45 minutes, basting every 15 minutes. Take ‘em out, slice ‘em ‘n’ eat! YUM!

BBQ Sauce

  1. Git yourself a heavy saucepan and sauté the onion and the garlic ‘til just turnin’ brown.

  2. Stir in the rest of the ingredients and bring to a boil.

  3. Now, reduce the heat to low and just simmer, stirrin’ it ‘til it thickens. Around 40 minutes.

  4. Then, turn it off and let it cool completely.

NOTES

To store the BBQ Sauce, refrigerate in an airtight container. Will keep for up to 1 week.
