Yep, this would be my perfect last meal… then I could go to my death, a happy Southerner! So that being said, here’s a quick and easy way to fry up some delicious “to die for” Fried Green Tomatoes.

INGREDIENTS
2 eggs (beaten)
½ cup buttermilk
½ cup unbleached flour
½ cup yellow cornmeal
1 teaspoon salt
½ teaspoon pepper
3 medium-size green tomatoes ( cut into about ⅓-inch slices)
Vegetable oil
Salt and freshly ground black pepper
INSTRUCTIONS
Mix the egg and buttermilk in a bowl.
Combine ¼ cup all-purpose flour, cornmeal, 1 teaspoon salt, and pepper in a shallow bowl or pan.
Dredge tomato slices in remaining ¼ cup flour; dip in egg mixture, and dredge in cornmeal mixture.
Heat oil in a large cast-iron skillet. The oil should be about ½ inch up the side of the skillet. Also, the oil is hot enough when you sprinkle a little flour into the skillet and it sizzles.
Drop tomatoes, in batches, into the hot oil, and cook for about 2 minutes on each side or until golden.
Drain on paper towels or a rack.
Sprinkle hot tomatoes with a little extra salt. Now, how easy is that? YUM!
