Me and my cousin George’s wife, Sharon, are two blondes that definitely have more fun! Especially when in the kitchen at the beach house! One summer, she cooked us all this here prime rib recipe when we were vacationin’ at our beach house in Florida.  It’s sooo easy that I couldn’t believe how perfectly it came out! Like cousin Sharon says, “Honey, fill my glass up with a good cabernet, slap that big ol’ “mamma-jamma” prime rib roast in the oven, and let’s party!” YUM!!!

Cousin Sharon’s Perfect Prime Rib Roast

Recipe by: Bobbi Jo Lathan

Recipe type: Entree

Cuisine: Southern

PREP TIME

5 mins

COOK TIME

2 hours 40 mins

TOTAL TIME

2 hours 45 mins

INGREDIENTS

1 four to six pound prime rib roast (will get 2 servings per rib)

Kosher salt

Freshly ground black pepper

Garlic powder

INSTRUCTIONS

  1. First off, you gotta know exactly how many pounds your rib roast weighs. Then, the night before, unwrap the roast and let it sit, uncovered, overnight, in your ice box (fridge).

  2. The next day, place the roast in your roasting pan and let it come to room temperature.

  3. After the roast has come to room temperature, preheat your oven to 500° F.

  4. Next, be generous and season your prime rib roast with salt and freshly ground black pepper and the garlic powder.

  5. Once you’ve seasoned the roast, place it on a rack inside the pan, fat-side-up to roast.

  6. Now comes the figurin’ out part. You’ve gotta know how many pounds of roast you’ve got, and multiply the pounds of your roast by 5 for how many minutes you will cook the roast at 500°. For example, if your roast is a 4- pounder, it’ll be 4 X 5 which equals 20. If it’s a six- pounder, it’ll be 6 X 5 = 30 minutes. Whatever the poundage, just multiply it by 5! Is this easy or what? Me and my cousin Sharon are both blond and we could even figure this out!

  7. Now, place that seasoned roast which is on the rack into the 500° F oven and roast that prime rib for however many minutes you calculated.

  8. Once the minutes is up, just turn the oven off, and let it set for the next two hours in the oven. DO NOT OPEN THAT OVEN FOR THE NEXT TWO HOURS, NO MATTER WHAT! I don’t care if there’s a hurricane, don’t you open that oven door for two hours!

  9. AFTER the two hours is up, and once you’re ready to eat, carve the roast and serve with a little creamy horseradish sauce! It’ll be a perfect medium rare! YUM!

  10. I’m tellin’ you, one dee-lish-us bite of cousin Sharon’s juicy prime rib roast and you’ll be havin’ so much fun, you’ll wanna dye your own hair blond and cook yourself some Prime Rib Roast! Dee-lish-us!
