When I was growin’ up, I always thought it was a real treat when my Momma would put a Pimento Cheese and Bacon Sandwich in my school lunchbox. She and my Aunt Jean were always exchangin’ recipes and this one of Aunt Jean’s Pimento Cheese And Bacon Sandwich was my all-time favorite. I’ve even added some freshly chopped jalapeño pepper to the recipe to kick it up a bit! Dadgum!
Aunt Jean’s Pimento Cheese and Bacon Sandwich

INGREDIENTS
½ pound good extra-sharp cheddar cheese (grated)
½ pound good white cheddar cheese (grated)
1 seven ounce jar pimentos (well-drained/patted dry/finely chopped)
⅔ cup mayonnaise
¼ teaspoon cayenne pepper
¼ teaspoon garlic powder
¼ teaspoon each salt and black pepper
7 slices of bacon (fried)
Lettuce (optional)
INSTRUCTIONS
Fry up your bacon slices and drain on some paper towel.
Now, git out a medium-sized mixin’ bowl.
Add all the ingredients except for the bacon and lettuce into the bowl.
Stir to blend. You can serve it right away or refrigerate for up to 6 days.
When you’re ready to serve, slather the cheese spread on your favorite deli bread (Aunt Jean would ONLY use white bread), top with 2 pieces of bacon and some lettuce and dig in. Dadgum, this stuff is good!
